“Right now it is our winter season here in Thailand which is the best time of year to enjoy Thai food dishes that feature fresh water fish ( eg. deep fried catfish or grilled catfish with sadow & chilli syrup) and also fresh water prawns ( grilled or roasted in garlic noodles). This is because the rivers are flowing with new rain water which has travelled down from the north into the Gulf of Siam so the freshwater animals are feeding well and are healthy strong so their meat has the best taste during this period. Also these animals will grow to be at their largest size right now.

Any dishes with lime will also taste better right now as it is the lime harvest season which give lime the freshest taste when added to soups or mixed with fish sauce. A fresh water prawn Tom Yum soup seasoned with winter lime will be the most delicious around this time of year.”
